2.5 cups rolled oats
1/4 cup shredded coconut
30ml maple syrup
1/4 cup sultanas
4 pitted dates (roughly chopped)
1/4 cup cranberries
1/4 cup slivered almonds
1/4 cup chia seeds
1/2 cup crushed walnuts
1 tbsp coconut oil (melted)
Mix all ingredients in a bowl except the honey and maple syrup
Place baking paper on a baking tray and poor mixture
Place in a 180 degree oven for 15 minutes
Remove and drizzle honey and put back in the oven for 10 minutes
Remove and stir to ensure even coating. Drizzle maple syrup over and put back in the oven for another 10-15 minutes until clumps start to form.
Remove from oven and leave to cool before putting in an airtight container.
Serve with your favourite berries and some greek yoghurt – YUM!
