Ingredients
150 grams Pitted dates – roughly chopped
75 grams butter chopped
10 grams brown sugar
3 grams Stevia
2.5 medium overripe bananas chopped
150 grams wholemeal self raising flour
50 grams chocolate protein powder
1 tsp bicarb soda
1 teaspoon cinnamon
3 eggs
Method
Put the dates, butter, sugar & Stevia in a bowl and cover with 75mls boiling water and leave for 5 minutes to soften.
Add banana, eggs and date mixture to a food processor and blitz until combined.
Stir in the flour, protein powder, cinnamon and soda well.
Spoon into a lined muffin tin (makes 10) and bake at 180 degrees for 25 minutes or until knife comes out clean.
