Protein Muesli Bars

Makes: 12
Calories per serve: 223 calories per bar. 

Ingredients
1/2 cup sultanas
1/4 cup cranberries
1/4 cup dates
1/2 cup almonds
1/2 cup walnuts
1/2 cup sunflower seeds
1/4 cup chia seeds
1/4 cup shredded coconut
1/2 tsp cocoa
1/2 tsp ginger
60g vanilla whey protein
1/2 cup quinoa flakes
1/2 tsp cinnamon
2 tbsp maple syrup (the good stuff)
2 egg whites
1 egg

Method
Pre heat an oven to 180 degrees. 

Put fruit, nuts, seeds, coconut, cocoa, ginger and protein in a food processor for about 30-40 seconds. 

Mix in Quinoa flakes and cinnamon. 

Beat eggs together and stir in to the mixture with the maple syrup. 

Press into a greased baking tin (18cm x 27cm approx) and bake for 15 minutes or until starts to brown on top.

Slice immediately and put on a cooling rack.  Will store in an airtight container for up to a week – or can be frozen.
